Keep the taste of the product while respecting its texture and gently combining ingredients and without spoiling them trying to over-enhance them, they are our chef’s objectives, Damien Leveau.

This one-star Michelin restaurant, awarded since 1999, offers the experience of an exceptional moment.

On the menu of the restaurant Albert 1er according to the seasons: Hare à la Royale, Risotto with Alba truffle, Dublin Bay prawn in carpaccio with Osciètre caviar, line caught sea bass roasted, Soufflé with yellow Chartreuse, Crêpe Suzette ... The wine list offers a selection of more than 1000 references.

An expression of taste

A cuisine spanning five generations that is influenced by the treasures of the French/Italian Alps :

  • Char and fera fish from Lake Léman
  • Snails from the Mont Blanc region
  • Sweetbreads
  • Dombes duckling
  • Plump ‘Bresse’ chicken
  • Locally farmed pork and lamb
  • Alpine cheeses

The Albert 1er's 'à la carte' menu is also influenced by the neighbouring Piedmont region :

  • Alba white truffle
  • Crab ravioli on a turmeric mousse
  • Garden peas with mint
  • Goats’ cheese and beetroot gnocchi

Nature as a source of inspiration

Dishes subtly enhanced by the offerings of our herb garden, where wood sorrel, tarragon, lemon thyme, savory, lemon balm, sage, marjoram and burnet grow under the watchful eye of Pierre Carrier, the creator of this noble kitchen garden.

Damien Leveau, now Head Chef of the Hameau Albert 1er gastronomic restaurant, continues the tradition of excellence of this one-starred restaurant.

Wine and food pairings

An epicurean journey where, our head sommelier, Marc-Henri Mialon, will accompany you on the discovery of the exceptional wine cellar which holds 19,000 bottles, representing more than a thousand wines in total, 646 of which feature in our wine list and where Grands Crus are left to age over time.

Perrine Carrier, Maitre D’ Maxime Chapelain and their team assure a professional and attentive service to all guests, throughout the establishment.

Annual closure 2020

  • From Sunday 3rd May to Friday 22th May 2020 reopenning for the Friday dinner.
  • From Sunday 18th October to Friday 4th December reopenning for the Friday dinner.
