On the occasion of the wine lunch on the Saturday 18th October 2025, we invite you to a unique oenological experience in the presence of a passionate winemaker.

 

Youri Greffe, head sommelier at the Michelin-starred restaurant Albert 1er, invites you to an exceptional event centered around the wines of Domaine Jean Baptiste Boudier


We will have the pleasure of welcoming Jean-Baptiste Boudier, who will introduce us to his world through a guided tasting, followed by a gastronomic lunch specially designed to highlight his wines.
Together with Youri Greffe, he will share his story, his philosophy of winemaking, and the unique characteristics of the Côte de Beaune terroir.

A Family Estate Rooted in the Côte de Beaune

 

Domaine Jean-Baptiste Boudier traces its origins back to the early 1900s, when an ancestor acquired his first vineyards in Pernand-Vergelesses. Jean-Baptiste follows in the footsteps of his paternal grandmother, who owned an estate in Aloxe-Corton.
This deep-rooted family history in the Côte de Beaune—a region emblematic of great Burgundy wines—forms the foundation of the present-day estate.


Transmission et modernisation

 

Representing the fifth generation of family winemakers, Jean-Baptiste Boudier inherited not only the land but also a passion for wine. In 2015, he took over three hectares of family vineyards.
Inspired by influential figures in the wine world, such as Denis Dubourdieu in Bordeaux, he decided in 2017 to focus on the family’s finest terroirs, deliberately limiting the cultivated area to 4.5 hectares.
This qualitative approach marked a shift from a purely patrimonial mindset to a more precise and ambitious vision of wine.
In 2021 and 2024, new appellations were added to the estate, which now spans 6.5 hectares across 11 appellations.

Jean-Baptiste Boudier’s guiding principle is clear: precision and authenticity.
His vision of wine is holistic, nourished by observation, scientific rigor, and a deep respect for living ecosystems.
His approach seeks to reveal the terroir rather than shape it, with profound humility in the face of nature.
The estate works closely with the soil and vines, using modern knowledge to best support the natural cycle of the vineyard.

 

The Terroir: A Prestigious Mosaic

The estate is made up of 23 plots located in the heart of the golden triangle formed by Aloxe-Corton, Pernand-Vergelesses, and Savigny-lès-Beaune.
Most of the vines are old, some dating back to 1942. These diverse terroirs—limestone, clay, sand, or marl—express the full range of Burgundy’s soil diversity.
Parcel selection lies at the heart of the estate’s project. Jean-Baptiste Boudier has chosen to work only with the most promising “climats” (vineyard plots).
The estate currently includes 2 Grand Crus (Corton-Charlemagne and Corton Renardes), 3 Premier Crus (including Pernand-Vergelesses Sous Frétille), and 5 Village appellations.
Corton Renardes, considered one of the greatest red Grand Crus of the Côte de Beaune, and Corton-Charlemagne, ranked among the world’s finest white wines, are the jewels of the estate.

Winemaking: Intuition, Rigor, and Respect for the Grape

 

Winemaking at Domaine Boudier is based on one essential principle: great wine starts with great grapes.
Since each wine comes from a single grape variety and a single vineyard plot, there is no room for error.
Careful observation of the soils and vines, precise timing of harvests (based on daily analysis and tastings), and intuition guide the entire process.
In the cellar, winemaking is gentle, favoring infusion over extraction.
Since the 2023 vintage, all white wines have been made without sulfur, marking an important step toward a more natural and expressive style.

 

A Human-Sized Team at the Heart of the Estate

Despite its high-quality ambitions, the estate remains a family-run operation with a small team: three permanent employees and loyal seasonal workers during harvest.
This stability fosters team cohesion and mutual trust, which are essential to the precision of vineyard work.

 

A Strong Environmental Commitment


Respect for the land is central to Jean-Baptiste Boudier’s approach.
Though not officially certified, the estate practices high-level sustainable viticulture, minimizing treatments thanks to a local weather station and constantly working to preserve biodiversity and soil life.

Domaine Jean-Baptiste Boudier represents a new generation of Burgundy winemakers: rooted in family tradition, open to science, deeply respectful of nature, and determined to reveal the finest terroirs of the Côte de Beaune with accuracy and sensitivity.
His pursuit of excellence is grounded in technical precision and a deep attentiveness to life, with a long-term vision where people, the land, and the wine grow together in harmony.

• In order to guarantee your reservation, we will ask for your credit card numbers and expiration date.
• In case of cancellation 48 hours before the date of the scheduled wine lunch, the value of the lunch per person cancelled will be charged, unless we manage to find replacements. We thank you for your understanding.
• The price of the tasting followed by lunch is €145 per person (including lunch, wine, water and coffee).
