Une farine savoyarde pour nos pains maison du restaurant gastronomique 'Albert 1er'

Depuis la réouverture du restaurant gastronomique Albert 1er, le vendredi 19 juin 2020 au soir, nous avons le plaisir de vous apporter une nouveauté concernant notre pain maison. En effet, vous pourrez découvrir nos pains maison en découpe en salle. Nous vous proposons une sélection de belles pièces découpées minute face à vous.

Le Hameau Albert 1er travaille avec de nombreux produits locaux. C'est pour cela que nous avons choisi de travailler avec la minoterie Métral basée à Saint-Pierre-en-Faucigny (74) pour la farine. Meunier local et indépendant depuis 1682, la minoterie Métral travaille dans le respect de l'environnement avec des agriculteurs de Savoie.

Les farines sont fabriquées et mélangées par leur soin et sans conservateurs dans leur moulin familial. Pendant la période des moissons, ils achètent leur blé aux agriculteurs et coopératives agricoles de Savoie (73) et Haute Savoie (74), afin de produire de la farine locale et 100% savoyarde.
Le restaurant gastronomique ‘Albert 1er’ leur achète de la farine tradition, seigle et épeautre, afin de vous proposer une sélection de pains comme notre pain aux céréales, épeautre, ail des ours, olives, amandes et noisettes, la baguette traditionnelle...

Pour plus de gourmandise nous vous proposons de déguster notre pain avec le beurre travaillé en deux façons par notre Chef ‘Damien Leveau’. Afin de respecter notre engagement pour les produits locaux nous achetons le beurre doux à l'Ecole Nationale des Industries du Lait et des Viandes basée à La Roche-Sur-Foron (74). Le Chef va donc retravailler ce beurre doux en deux sortes : une aux cristaux de sel de Maldon (sel d'Angleterre) et une autre selon la période (en ce moment il s'agit de l'ail des ours).

Since the reopening of the gastronomic restaurant Albert 1er on Friday evening, June 19th 2020, we are pleased to bring you a novelty concerning our homemade bread. Indeed, you will be able to discover our home-made breads cut in the dining room in our gastronomic restaurant. We propose you a selection of beautiful pieces cut minute in front of you.

The Hameau Albert 1er works with many local products. This is why we have chosen to work with the flour mill Métral based in Saint-Pierre-en-Faucigny (74) for the flour. A local miller and independent since 1682, the Métral flour mill works in the respect of the environment with farmers from Savoie.

The flours are made and mixed by their care and without preservatives in their family mill. During the harvest period, they buy their wheat from farmers and agricultural cooperatives in Savoie (73) and Haute Savoie (74), in order to produce local and 100% Savoyard flour.

The gastronomic restaurant 'Albert 1er' buys them traditional flour, rye and spelt, in order to offer you a selection of breads such as our bread with cereals, spelt, bear's garlic, olives, almonds and hazelnuts, the traditional baguette...

For more delicacy we propose you to taste our bread with butter worked in two ways by our Chef 'Damien Leveau'. In order to respect our commitment to local products we buy the soft butter from the National School of Milk and Meat Industries based in La Roche-Sur-Foron (74). The Chef will therefore rework this sweet butter in two sorts: one with Maldon salt crystals (salt from England) and another according to the period (at the moment it is bear's garlic).
