This one-star Michelin restaurant, awarded since 1999, offers the experience of an exceptional moment.

On the menu of the restaurant Albert 1er according to the seasons: Hare à la Royale, Risotto with Alba truffle, Dublin Bay prawn in carpaccio with Osciètre caviar, line caught sea bass roasted, Soufflé with yellow Chartreuse, Crêpe Suzette ... The wine list offers a selection of more than 1000 references.

The indentation of a wall reveals a façade of greenery. A luminous world nestled in a kingdom of stone. The scents of alpine flowers, the flicker of water through the rocks...a secret nature awakens in the crystal clean air.

With its white blanketed rock faces and crystals, the rare and desirable world above us is worthy of each and every ascent. The goal is not so much to reach the summit as it is to feel the sensations of living in the here and now. A universe where every moment reclaims its rightful place, thus enriching our present.

Haute cuisine and the high mountains share many experiences. For each, time and sensations merge together, with determination and unity being the essential ingredients of their success.

Our mountain setting for over 5 generations

Today, Perrine Carrier is the fifth generation of her family to welcome you to this prestigious establishment which has been nestled under the Aiguilles de Chamonix since 1903. It is here that the link between the high mountains, high-end hospitality, and haute cuisine has been forged. A place that has always known how to preserve the harmony of its family structure while encapsulating the spirit of discovery that transcends the mountain peaks and these kitchens.

A sense of adventure, embodied today through talented chef, Damien Leveau, who seeks to mirror the sensations of vertigo often felt in this awe-inspiring environment through the essence of taste and a perfect balance of flavours.

Wine and food pairings

The wine cellar of our gourmet restaurant is also a reflection of the Carrier family’s passion which spans several decades, with its 19,000 bottles and over 1,000 references, 640 of which are listed on the menu. It is head sommelier, Marc Henri Mialon who holds the key to the knowledge of this heritage. He will sensitively guide you between exceptional Grands Crus and delightful new discoveries.
