Here we are in Chamonix, at the foot of Mont Blanc, where the Carrier family invites guests to embrace the spirit that has guided them since 1903.
Chef Damien Leveau’s cuisine subtly tells the story of our region, revealing its flavours through carefully crafted dishes. An exceptional wine cellar, reflecting over 120 years of knowledge and passion for wine, enhances this deeply emotional experience.

Cuisine, a passion that has driven the Carrier family for over one hundred and twenty years, is continually being reinvented.
As early as the days of the Hôtel de la Pension du Chemin de Fer, opened in 1903 by Joseph Carrier and his wife Lydie, the talent of this “Lyonnaise mother” was already widely recognised. A remarkable cook, she delighted gourmets with her slow-cooked dishes that paid tribute to traditional French cuisine.
The son of a cereal farmer and raised in a culture of fine food, Damien Leveau comes from Chartres and has felt a true calling for cooking since childhood. Self-taught, instinctive yet highly perfectionist, he embodies the spirit of the house while sharing its philosophy, bringing his own personal touch and sensibility.
The chef’s inspiration often comes from a visit to the kitchen garden, as well as conversations with carefully selected local producers in search of the finest ingredients. There is no “signature dish” for this free-spirited chef, who embraces spontaneity and constant renewal, favouring seasonality as his guiding principle—in keeping with the Albert 1er’s long-standing commitment to this philosophy.

There is no such thing as too much wine! The richness of the cellar at Le Hameau Albert 1er reflects the Carrier family’s passion for oenology over several decades, with 19,000 bottles and more than 1,000 references, including 640 featured on the wine list! A rare heritage to discover in the Michelin-starred restaurant, through tastings of carefully selected vintages, at the QuartzBar, or during our winetasting lunches.
Fine attention to detail
Beauty and functionality come together in perfect harmony… In this grey-blue atmosphere evoking the surrounding rock, adjustable polished steel screens frame the views while preserving the intimacy of this refined dining room.
The lighting composition blends the warm glow of decorative blown-glass pendants with precisely directed LED beams, drawing attention to each plate at the heart of the dining experience. Each dish is enhanced by an original handcrafted creation, designed exclusively for the Albert 1er restaurant by a local ceramic artist or regional artisans.

The restaurant is open exclusively in the evening, from Friday to Tuesday, between 7:15 pm and 9:00 pm.
