Pascal Payot fresh goat cheese ravioli , frothy pea sauce. Large sautéed prawn, Bellota 5j, purple artichoke and a dash of olive oil. Féra fished from the Leman lake, carrots and lemon preserves Lightly salted Aosta valley trout fillet, frothy broad bean sauce. Freshly prepared Mediterranean baby squid, tomatoes, piquillo pepper and basil, ink sauce. - - - Veal sweetbreads with meadow mushroom. Roasted lamb chop with polenta and thyme. - - - Trolley with a choice of fresh and aged French and Italian cheeses. - - - Poached rhubarb with black cardamon and citrus, salty caramel sorbet. Dark chocolate mousse and milk-mint sorbet.

"noire de Crimée" tomato sliced with fresh garden herbs, tomato bouillon and Bellota 5J. Large sautéed prawn, purple artichoke and a dash of olive oil. Lightly salted Aosta valley trout fillet, frothy broad bean sauce. Farm egg, meadow mushroom, frothy mushroom sauce. "Pays du mont-Blanc" snail fricassee, eggplant and wild celery.
Farm veal with home-made bacon, Beaufort macaroni.
Trolley with a choice of fresh and aged French and Italian cheeses.
Shortbread with strawberries, Madagascar vanilla, green cardamom ice cream.
